(This makes one serving, add more for more servings)
- 1 chicken breast
- 1 wedge Laughing Cow Light Swiss cheese
- 3 slices 98% fat free ham
- kosher salt and black pepper
Place chicken between two pieces of food wrap and hammer until about 1/4” thick
Sprinkle with salt and pepper
Spread wedge of cheese evenly over chicken with a knife
Lay slices of ham over cheese
roll up and secure with a tooth pick
Place in shallow pan, cover with tin foil and cook for 30 minutes.
Remove foil and cook for 15 minutes or until firm.
